Phase 1 Day 8



Breakfast: Apple-Walnut Amaranth (Phase 1 Day 1)
Snack 1: Orange & Soy Nuts
Lunch: White & Black Beans on a Bed of Greens (adapted, 1.1)
Snack 2: Artichoke Paste with Raw Veggies (1.4)
Dinner: Chicken & Vegetable Curry with Quinoa (1. 7)

I enjoyed last night's chicken curry leftovers with quinoa instead of brown rice. That made for quite an interesting pairing.
